Dates Walnut Cake

Gluten Free , Sugar Free , Cake With No Eggs And No Butter .

As They Wisely Say ,”You Are What You Eat , So Always Eat Sweet .”

I have always been fascinated by food which is visually appealing , has healthy ingredients and is delicious in taste at the same time .

So I decided for a Gluten Free , SugarFree Cake with no butter and no eggs.

Ingredients

Hot Milk – 1 Cup (255 ml ) ( I prefer Almond milk ) Pitted Dates – 2 Cups (300 grams ) Baking Powder – 1 tsp. Baking Flour – 2 Cups {260 grams }( Can Choose Coconut Flour for Gluten Free Cake or Any other Baking Flour of your choice .) Baking Soda – 1/2 tsp . Olive Oil – 3/4 th Cup ( 190 ml ) Pinch of Salt . Milk – 1/2 Cup ( 125 ml ) Plain Yogurt or Curd – 1/4 th Cup (60 ml ) Dates – 5 Chopped. Walnuts – 1/2 Cup ( 60 grams ) Walnuts3 tbsp chopped for garnish. Cinnamon Powder – 1/4 th tsp (optional ) Vanilla Essence – 1 tsp (optional )

Method :

Soak two cups of pitted dates in one cup of hot milk for half an hour . Cool the mixture and blend it to a smooth paste in a blender. Transfer the smooth paste in a glass bowl .Add Three fourth cup of olive oil and one fourth cup of plain yogurt to the dates paste and blend it to a smooth consistency with an electric hand blender. Make Sure all the ingredients are combined well together.( You can also add 1 tsp of Vanilla essence and 1/ 4 th tsp of cinnamon powder to this mixture , totally optional . ) Place a Sieve over the glass bowl and Sieve Together two cups of baking flour of your choice , with one teaspoon of baking powder , half a teaspoon of baking soda and pinch of salt . (I usually prefer coconut flour as its gluten free and adds an aromatic coconut flavor to the cake . But you can use any baking flour of your choice .) Add half cup of milk to the mixture and blend it to a smooth paste. Add half cup of chopped walnuts and five chopped dates to the above mixture . Mix well using the cut and fold method . Take a baking dish , or a silicone cake mould . Apply a little oil on the base and the sides of the baking dish , dust a little flour also so that the cake doesn’t stick to the sides of the mould . Transfer the contents of the glass bowl to the baking mould . Can garnish the top of the batter with another layer of three tablespoons of chopped walnuts and sliced almonds . Bake the cake at 180 degree Celsius for forty five minutes . Take it out and insert a toothpick or a stick inside the Cake . If it comes out clean , the cake is baked to perfection. Enjoy with your favorite tea or coffee.

I like the combination of Walnuts and Olive Oil in this recipe as both of them are a good source of protein and healthy fats which boost the good cholesterol HDL in the body . Dates is a natural sweetener and a better option to use compared to any refined sugar . Almond Milk is another healthy food ingredient one can use under the milk in this recipe, great source of protein and healthy fat.
